I'm Back!

I can't believe it's really been six months since my last entry. Honestly, I haven't really done much cooking in the past six months either. Sadly, Lean Pockets, canned soup and take-out teriyaki has graced the dining room table far too many times. But I've also discovered the joy of Trader Joe's. I've always loved Trader Joe's for cheap wine and No-Pudge Brownies, but in the past few months, I've kept our freezer stocked with quick and easy meal options that are life-savers for weeknights. My current favorite is the Mandarin Orange Chicken. Yum. You just heat the pre-cooked chicken in the oven, warm up the sauce in the microwave, mix them together, and dinner is served. I mix in a bag of stemmed broccoli and serve the whole dish over jasmine rice. A quick and semi-healthy dinner in less than 30 minutes.

I also love the "Just Chicken" they have in the refrigerated section. It's just grilled chicken breasts, lightly seasoned and ready eat. For just over $5.00, there's more than enough chicken to feed me and my husband, and the convenience factor makes it a no-brainer. Paired with Trader Joe's Lemon Dill Sauce or Thai Yellow Curry Sauce, I'm a happy camper. Of course there's nothing like making a meal from scratch, but when I'm working 10-12 hour days, these meals are a life-saver.

Hopefully when life settles down a bit, I'll be back in the kitchen on a more regular basis. I have stacks of cooking magazines with dog-eared pages and hundreds of recipes saved online from numerous fellow food bloggers... just waiting to be made. I'm hoping to start trying new recipes more often. But in the mean time, I'll be adding a couple recipes that I made in the past few months, but never got around to posting.
